New York Style Pizza Crust - Food Processor Method
This has taken me 3 years to perfect
Using a food processor reduces the amount of kneading required and develops the gluten for the perfect airy crust with that signature New York bite.
Weighing the ingredients is critical.
Ingredients:
398 grams bread flour (3 cups)
8.0 grams salt (1.25 teaspoons)
2.0 grams Instant dry yeast (1/4 packet)
4.0 grams white sugar (1 teaspoon)
246.5ml warm water (110 degrees F / 45 degrees C) (1.125 cup)
6.0 ml olive oil (½ tablespoon)
Directions:
Put flour, salt, yeast and sugar in food processor. Pulse a few times to combine.
Add olive oil to water in a small bowl or pitcher.
While running food processor, slowly add the liquids until dough ball is formed. Run an additional one minute. Dough should be a bit sticky.
Turn out onto floured surface and with floured hands knead 2 minutes until dough is smooth and elastic. Divide in two. Form into balls and place in lightly oiled gallon sized storage bag. Place in refrigerator for up to 72 hours. Can be frozen until needed.
To make pizza:
Remove dough from refrigerator (or freezer) and allow it to reach room temp. (Cold dough can be used, but will blister more.)
Meanwhile, preheat pizza stone to 550 degrees.
Cut dough from bag and using floured back of hands stretch to desired size and thickness being careful not to de-gas.
Place directly on hot pizza stone in oven. Sauce, cheese and add toppings or assemble on floured pizza peel.
Bake 15 to 20 minutes popping bubbles if they form.
(Tip: Place shredded cheese in freezer ½ hour before use to prevent it from burning before crust is done.)
